Description

Refreshing and light peach yogurt crumble jars that are perfect for a sweet treat without heating the kitchen.

Ingredients

Scale
  • 4 ripe peaches, diced small (about 4 cups)
  • 2 tablespoons honey or maple syrup, more to taste
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 2 cups plain or vanilla Greek yogurt (thick works best)
  • 1 cup quick oats
  • 1/2 cup crushed graham crackers or crunchy cookies
  • 2 tablespoons melted butter or coconut oil
  • 2 tablespoons brown sugar
  • 1/2 teaspoon cinnamon
  • Optional: 1 to 2 tablespoons chia seeds for peach juices, and a handful of chopped nuts

Instructions

  1. Make the peach layer: Stir peaches with honey, lemon juice, vanilla, and a pinch of salt. If the peaches are under-ripe, warm them in a skillet for 3 to 5 minutes to soften and release juices. Add chia seeds if you want a thicker, jammy texture.
  2. Make the crumble: In a bowl, mix oats, crushed grahams, brown sugar, cinnamon, and melted butter until it clumps. Spread on a lined pan and toast in a 350°F oven for 8 to 10 minutes, or toast in a skillet over medium heat until fragrant. Let cool completely so it turns crisp.
  3. Layer the jars: In 6 small jars or 4 medium jars, add a spoonful of peaches, a dollop of yogurt, and a thin layer of crumble. Repeat once more. Finish with a tiny peach crown and a pinch of crumble for texture.
  4. Chill: Cover and chill at least 30 minutes for flavors to settle. The crumble will hold as long as it’s fully cooled before layering.

Notes

Cool the crumble fully before layering, and consider storing crumble separately for extra crunch if keeping for more than 2 days.
