Description

A lighter take on the classic cinnamon roll, made with blended cottage cheese for a tender, creamy texture without the heavy sweetness.


Ingredients

  • 1 cup cottage cheese, blended until smooth
  • 1 large egg
  • 3 tablespoons melted butter, plus more for brushing
  • 3 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour, plus extra for dusting
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon fine salt
  • 2 tablespoons soft butter (for filling)
  • 1/3 cup brown sugar (for filling)
  • 2 teaspoons ground cinnamon (for filling)
  • Pinch of salt (for filling)
  • 2 tablespoons finely chopped nuts or raisins (optional)
  • 1/3 cup Greek yogurt (for glaze)
  • 2 tablespoons cream cheese (for glaze)
  • 1 to 2 tablespoons maple syrup (for glaze)
  • Pinch of salt (for glaze)
  • Splash of milk (to thin glaze)

Instructions

  1. Blend the cottage cheese until silky. Stir in the egg, melted butter, honey, and vanilla until combined.
  2. In a large bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Add the wet mixture to the dry ingredients. Stir with a spoon until a soft dough forms. If sticky, add a bit more flour.
  4. Let the dough rest for 5 to 10 minutes.
  5. On a floured surface, roll the dough into a rectangle about 10 by 14 inches.
  6. Mix brown sugar, cinnamon, and pinch of salt for the filling. Brush the dough with soft butter, sprinkle with cinnamon mixture, and add nuts or raisins if desired.
  7. Roll from the long edge into a tight log and slice into 10 to 12 rolls.
  8. Arrange in a greased 9-inch pan, brush tops with butter, and bake at 350°F for 20 to 24 minutes.
  9. For the glaze, whisk yogurt, cream cheese, maple syrup, salt, and milk until smooth. Spoon over warm rolls.

Notes

For a different flavor, try using coconut sugar or adding a splash of orange zest to the glaze. These rolls can be made ahead and stored for easy breakfasts.
