- 1/2 cup protein powder
- 1/3 cup sweetener (like stevia or erythritol)
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup unsweetened applesauce
- 1 cup almond milk
- 1 tsp vanilla extract
- 1/2 cup dark chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a muffin tin with paper liners.
- Combine the dry ingredients in a large mixing bowl: flour, cocoa powder, protein powder, sweetener, baking powder, baking soda, and salt.
- Whisk together your wet ingredients in a separate bowl: applesauce, almond milk, and vanilla extract.
- Pour the wet mixture into the dry ingredients and stir until just mixed, being careful not to overmix.
- Fold in dark chocolate chips if desired.
- Portion out the batter into the muffin tin cups, filling them about two-thirds full.
- Bake for 18-20 minutes, until a toothpick inserted comes out clean.
- Let them cool for a few minutes before transferring to a wire rack.
