Description

Delicious and healthy strawberry oatmeal bars with a crunchy oat crust and soft strawberry filling, perfect for breakfast, snacks, or dessert.


Ingredients

  • 2 cups rolled oats
  • 1 cup whole wheat flour
  • 1/2 cup brown sugar
  • 1/2 cup butter, melted
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 cups fresh strawberries, sliced
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1/4 cup sugar

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×9 inch baking dish.
  2. In a large bowl, mix rolled oats, flour, brown sugar, melted butter, salt, and vanilla extract until crumbly.
  3. Press half of the mixture into the bottom of the prepared baking dish.
  4. In a separate bowl, combine strawberries, lemon juice, cornstarch, and sugar. Pour this mixture over the oat base in the baking dish.
  5. Sprinkle the remaining oat mixture on top of the strawberries.
  6. Bake for 25-30 minutes or until the top is golden and the strawberries are bubbly.
  7. Allow to cool before cutting into bars and serve.

Notes

Use ripe strawberries for the best flavor. Press the bottom layer firmly for better cohesion, and let bars cool completely for clean slicing.
