Ingredients

Scale
  • 2 large ripe bananas
  • 1 egg or 1 flax egg
  • 2 tablespoons nut butter (peanut, almond, or sunflower seed)
  • 1 to 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla (optional)
  • 1 and 1/2 cups rolled oats
  • 1/2 cup protein powder
  • 1 teaspoon baking powder
  • A generous pinch of salt
  • 1 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Mash the ripe bananas in a medium bowl until mostly smooth.
  3. Whisk in the egg (or flax egg), nut butter, and honey or maple syrup. Add vanilla if desired.
  4. In the same bowl, mix in the rolled oats, protein powder, baking powder, salt, and cinnamon until combined.
  5. Fold in the chocolate chips or preferred mix-ins. Adjust consistency with milk or oats if needed.
  6. Drop 12 mounds of batter onto the baking sheet and lightly flatten the tops.
  7. Bake for 11 to 14 minutes until edges are set and bottoms are lightly golden.
  8. Allow to cool on the pan for 5 minutes before transferring to a wire rack.

Notes

Add gluten-free oats and protein powder for a gluten-free version. For a vegan option, use a flax egg and maple syrup.
