Description

A light, creamy, and tangy dessert that satisfies sweet cravings without derailing your healthy eating.


Ingredients

Scale
  • 2 cups plain Greek yogurt
  • 12 tablespoons honey or maple syrup (to taste)
  • 1 teaspoon vanilla extract
  • A pinch of salt (optional)
  • 1 cup fresh or frozen raspberries
  • Toppings: chopped nuts, seeds, coconut flakes, dark chocolate chips, or a drizzle of nut butter
  • Optional: 1 scoop of protein powder

Instructions

  1. Line a sheet pan with parchment paper.
  2. In a bowl, mix the yogurt with honey or maple syrup, vanilla, and salt until smooth. Optional: Add protein powder.
  3. Spread the yogurt mixture onto the lined pan in an even layer, about a quarter inch thick.
  4. Scatter raspberries over the yogurt and gently press them in.
  5. Add any additional toppings if desired and swirl in peanut butter or melted chocolate.
  6. Freeze for 2-3 hours, or until completely firm.
  7. Lift the bark out of the pan, break into pieces, and store in a sealed container in the freezer.

Notes

For a thicker, creamier bark, use Greek yogurt. Adjust sweetness to taste, and feel free to experiment with different mix-ins.
