Ingredients

- 2 cups plain Greek yogurt
- 1–2 tablespoons honey or maple syrup (to taste)
- 1 teaspoon vanilla extract
- A pinch of salt (optional)
- 1 cup fresh or frozen raspberries
- Toppings: chopped nuts, seeds, coconut flakes, dark chocolate chips, or a drizzle of nut butter
- Optional: 1 scoop of protein powder
Instructions
- Line a sheet pan with parchment paper.
- In a bowl, mix the yogurt with honey or maple syrup, vanilla, and salt until smooth. Optional: Add protein powder.
- Spread the yogurt mixture onto the lined pan in an even layer, about a quarter inch thick.
- Scatter raspberries over the yogurt and gently press them in.
- Add any additional toppings if desired and swirl in peanut butter or melted chocolate.
- Freeze for 2-3 hours, or until completely firm.
- Lift the bark out of the pan, break into pieces, and store in a sealed container in the freezer.
Notes
For a thicker, creamier bark, use Greek yogurt. Adjust sweetness to taste, and feel free to experiment with different mix-ins.
