These no-bake Cookie Dough Protein Bars offer a sweet, chewy snack packed with protein, perfect for post-workout or a quick treat.

- 1 ½ cups almond flour
- ½ cup vanilla protein powder
- Pinch of salt
- ¼ cup creamy almond butter (or peanut butter)
- ¼ cup maple syrup
- 1 tablespoon coconut oil, melted
- 1 teaspoon vanilla extract
- 2 tablespoons almond milk (as needed for texture)
- ¼ cup mini chocolate chips (dairy-free if needed)
Instructions
- In a large bowl, stir together the almond flour, vanilla protein powder, and a pinch of salt until well combined.
- Pour in the almond butter, maple syrup, melted coconut oil, and vanilla extract. Mix thoroughly until a thick dough begins to form.
- If the dough feels too dry or crumbly, add 1–2 tablespoons of almond milk gradually until you achieve a smooth, pliable consistency.
- Gently fold the mini chocolate chips into the dough until evenly distributed.
- Line a loaf pan or small square baking dish with parchment paper. Press the dough evenly into the pan and smooth the top.
- Refrigerate for at least 1 hour or until firm. Slice into 8–10 bars and store in an airtight container.
Notes
Use a firm almond butter for the best texture. Store bars in an airtight container in the fridge for up to one week.
