Description
This vibrant blue spirulina smoothie blends tropical fruit, coconut yogurt, and blue spirulina for a creamy, kid-friendly drink with no processed sugar.
Ingredients
1 medium banana, frozen in chunks
1/2 cup plain coconut yogurt, divided
1/2 cup unsweetened soy milk or other plant milk
1/2 cup frozen mango
1/2 cup frozen pineapple
2 teaspoons almond butter
1 teaspoon blue spirulina powder
1/4 cup ice (optional, for extra iciness)
Honey or maple syrup (optional, for extra sweetness)
Instructions
1. Cut the banana into chunks and freeze for at least 20 minutes or overnight. Use the back of a spoon to paint clouds onto the inside of your smoothie glass using half the coconut yogurt.
2. Place remaining yogurt, plant milk, frozen fruit, almond butter, blue spirulina, and ice (if using) into a blender. Blend on high for 30 seconds to 1 minute until smooth.
3. Pour smoothie into prepared glass and serve immediately. Add optional honey or maple syrup if extra sweetness is desired.
Notes
Blue spirulina provides vibrant color without fishy taste.
Use clear glasses for painting coconut yogurt clouds for a cloud effect.
Best consumed fresh, but will keep in the fridge up to 24 hours.
