This 2 ingredient cottage cheese chocolate mousse is creamy, high-protein, gluten-free, and perfect for a quick sweet snack or dessert. It features a rich chocolate flavor with an optional crisp chocolate shell topping.
Ingredients
1 cup cottage cheese (preferably full-fat for creaminess)
1/4 cup cocoa powder or cacao powder
1/4 cup powdered sugar, monkfruit, or maple syrup (adjust to taste)
1 tbsp chocolate chips (for optional chocolate shell)
1 tsp coconut oil (for optional chocolate shell)
Instructions
1. Place cottage cheese in a blender or food processor. Blend until creamy and smooth.
2. Add cocoa powder and sweetener. Blend again until fully combined and velvety.
3. Pour mixture into serving jar or bowl. Freeze for 1-2 hours, stirring once halfway through to prevent iciness.
4. For chocolate shell: melt chocolate chips with coconut oil in microwave (10-second bursts, stirring between) or over double boiler. Pour over mousse.
5. Sprinkle sea salt if desired. Serve chilled.
